Authentic Scottish Shortbread
+ 2 sticks butter
+ 1 stick margarine (you can use a third stick of butter for true decadence, in place of the margarine)
+ cup sugar
+ 3 cups + sifted flour

Cream butter and sugar together, slowly add flour, mixing it in well, until dough forms a ball You might need a bit more than 3 cups flour.

Divide dough into 2 equal balls

Line 2 pie plates with waxed paper and cut off excess. Press dough into pie plates evenly. Using fork, prick the entire surface of dough.

Bake in oven at 350 degrees for 45 minutes or until golden brown. Sprinkle granulated sugar over the top. Immediately cut while warm. Use shot glass to make center circle. Cut into wedges.
